Below are some products we are developing to address the lack of sugar free products in the market which are affordable, high quality and use simple ingredients. We have already made various small batches in our kitchen lab.
We have met with various product developers in Australia and internationally to discuss how they developed their innovative sugar free products and how we can work together to expand the selection for Australians.
Sugar Free Gummy Bears
Objective: Lower calories, lower price, no sugar alcohols, all natural sweeteners, colour & flavours.
Progress: We've made some really delicious batches. These would be cheaper than other sugar free gummy bears and more bolder flavour options, now investigating shelf life and chewiness.
Sugar Free Marshmallows
Objective: Lower calories, simpler ingredients and various flavours to enjoy a selection of marshmallow snacks without the guilt. Aiming to avoid sugar alcohols and minimal ingredients. The current sugar free marshmallow offering is very limited for sugar free options.
Progress: Xylitol is a leading substitute for sugar for marshmallows and these marshmallows are almost identical to regular sugar sweetened marshmallows. Sugar alcohols substitues still being tested. Simple flavoured batches have been a success. But Xylitol marshmallow sets very quickly, which limits how much flavour can be mixed into the marshmallow.
Sugar Free Chocolate Snacks
Objective: Sugar free chocolate snacks which taste just like their sugar counterparts or better. Avoid sugar alcohols (especially maltitol) and others notorious for creating digestive issues.
Progress: Chocolate is tricky and delicate. We are trying to build up experience with numerous failures on our record. But we had some great inspiration in Paris where we visited various chocolatiers who don't use sugar and learnt their secrets.
